- 1/4 fresh gatlic (minced)
- 1/4 cup onion
- 1 teaspoon salt and pepper to taste
- 1 dash oil and bacon dripings
- 7 large eggs

if polk salad is fresh it must be cleaned and boiled then drained and boiled again and drained
Step 2
strain out as much of liquid as possible out of greens. heat oiled skillet and saute onion and garlic in skillet.

add greens and saute for about6-8 minutes. season to taste & add eggs to skillet and cook until eggs are mixed and fully cooked thru out greens.
